Publican Quality Bread is head baker Greg Wade’s retail bakery and cafe at 1759 W Grand Ave in West Town, at Grand and Wood, with a second location in Oak Park. The bakery opened in June 2022 and works with heritage grains grown at Spence Farm and stone-milled at Janie’s Mill. The case holds sourdough, baguettes, croissants, kouign-amann, tarts and cookies, and the kitchen serves tartines and sandwiches with La Colombe coffee.
