About
George’s Deep Dish is a small pizzeria at 6221 N Clark St in Edgewater run by owner George Bumbaris. The deep dish starts with a 48-hour cold-fermented sourdough built on a Greek lagana flatbread recipe, dusted with cornmeal on the bottom and left to caramelize at the edge, with toppings layered over the sweet red sauce instead of under it. Pies are named for famous Georges: the Halas’ Classic, Weasley’s Spicy Red Top with sausage, roasted red peppers and ricotta, and Clooney’s ER with meatballs and bacon. Tavern-style thin pizzas are also made.
