Nabuki

Nabuki is a Japanese restaurant and sushi bar at 18 E. First St. in downtown Hinsdale, a block from the Hinsdale Metra station. Executive chef Juan Perez, who is from Mexico and learned sushi in California and New York, pairs a traditional nigiri and sashimi list with Latin-accented dishes such as hamachi tiradito with serrano and cilantro and the Piccadilly lobster tempura roll in soybean paper. The modern room has a black granite bar and a sushi counter, and the restaurant has drawn a near-cult following from the western suburbs.
