About
Carnitas Uruapan is a carnitas shop at 1725 W. 18th St. in Pilsen, founded in 1975 by Inocencio Carbajal, known as El Güero, with recipes from Uruapan, Michoacán. His son Marcos Carbajal now runs the business. Pork carnitas are sold by the pound straight from the lard with warm tortillas and salsa, and customers can ask for a mix of rib, belly and shoulder or specify a cut. The side menu is short: tacos dorados filled with potato, chorizo or sesos, chicharrón, nopales salad, refried beans and weekend menudo.

- The Pilsen original is takeout only; dine-in locations are at 2813 W. 55th St. in Gage Park and 3801 W. 26th St. in Little Village.
- The 150-seat Little Village flagship opened in early 2025, per Block Club Chicago.
- Block Club reported the family was selling 12,000 to 14,000 pounds of carnitas a week before that opening.
- The 26th Street store has a parking lot across the street.
