Downstate Donuts is a potato-donut shop at 1132 W Wilson Ave in Uptown, two blocks west of the Wilson Red Line station, founded in 2018 by restaurant veterans Virgil and Peter. Mashed potato in the batter keeps the cake donuts soft and slightly creamy, and flavors rotate with the season: lemon mascarpone, whipped Vietnamese coffee, a Japanese pancake with butterscotch. The shop is small and keeps bakery hours, and a donut trike works farmers markets and events in warm months.
