Jinsei Motto

Jinsei Motto is a sushi restaurant at 2456 N. California Ave. in Logan Square from chefs Patrick Bouaphanh and Eric Blanck, who describe the counter as Chicago’s original and largest dry-aged seafood sushi restaurant. Dry aging concentrates the flavor of tuna and salmon the way it does a steak, and the menu leans into that with nigiri sets of dry-aged bluefin and seasonal fish, single pieces from sea bream to uni, and a live-fire robata section cooked over Japanese oak charcoal for diners who want lamb chops or chicken thigh instead of raw fish.
