Taquería Chingón is a Mexico City-style taqueria at 817 W. Fulton Market in the West Loop, run by Marcos Ascencio and Oliver Poilevey. The restaurant grew out of backyard barbecues and late-night pop-ups before moving into the current larger room on Fulton Market. Tortillas are pressed and griddled to order, and the menu is led by al pastor carved from a trompo of Berkshire pork shoulder with pineapple, duck carnitas with date purée and chicharrón, and a fried queso with mole negro.
