The Fat Shallot runs the beachside food stand in the Gillson Beach House in Wilmette, the park district’s upgraded beachside food stand. The Chicago sandwich company also has counters at 2468 N. Clark St. in Lincoln Park, 2902 Central St. in Evanston, the Merchandise Mart and Sterling Food Hall, and books its food truck for catering. At Gillson, the stand’s hours follow the beach season and taper off with the lifeguard schedule in late summer.
